fresh rhubarb compote

INGREDIENTS:

  • 3 cups (5-6 stalks) fresh rhubarb roughly chopped

  • 1/2 cup water

  • 1/2 cup granulated sugar

INSTRUCTIONS:

  • Combine all the ingredients in a pot

  • Heat to medium-high and stir occasionally until rhubarb begins to break down completely

  • Remove from heat and allow to cool to room temperature

  • Use as a topping for vanilla ice cream, oatmeal or yogurt bowls

  • Keep in a medium size tupperware container and refrigerate
