fresh rhubarb compote
INGREDIENTS:
3 cups (5-6 stalks) fresh rhubarb roughly chopped
1/2 cup water
1/2 cup granulated sugar
INSTRUCTIONS:
Combine all the ingredients in a pot
Heat to medium-high and stir occasionally until rhubarb begins to break down completely
Remove from heat and allow to cool to room temperature
Use as a topping for vanilla ice cream, oatmeal or yogurt bowls
Keep in a medium size tupperware container and refrigerate
