gnarly muffins by joy the baker

These muffins by Joy The Baker make me nostalgic because my sister and I would always make them in high school when I my interest in nutrition first began. These muffins are loaded with fibre from the oat bran, flaxseeds, and fruit/veg. Plus, I love that you can use any fresh produce you have on hand (I usually use carrots, zucchini, and apples). I love making a big batch and freezing the extra muffins for a quick and easy breakfast/snack.
