chocolate chip banana bran muffins
serving size: a dozen muffins
INGREDIENTS:
2 eggs
2.5 ripe bananas
1/2 cup plain greek yogurt
1 tsp natural vanilla extract
1/4 cup olive oil
1 tbsp maple syrup
1 cup wheat bran
1 cup whole wheat flour
1 tsp baking powder
1 tsp baking soda
Pinch of salt
Optional: pinch of cinnamon
Optional: chocolate chips
Optional: walnuts
INSTRUCTIONS:
Preheat oven to 350°F
Grease the bottom of a muffin pan with butter or olive oil
Mix all the wet ingredients in a mixing bowl
Combine the dry ingredients in a different bowl, then stir in the wet ingredients until combined. Don’t over mix.
Fold in the chocolate chips and walnuts (if using)
Transfer the batter to the muffin pan and bake for ~20 minutes
Let the muffins cool down before removing them from the pan
Optional: store them in the freezer to defrost for weekday breakfasts
