chocolate chip banana bran muffins

serving size: a dozen muffins

INGREDIENTS:

  • 2 eggs

  • 2.5 ripe bananas

  • 1/2 cup plain greek yogurt

  • 1 tsp natural vanilla extract

  • 1/4 cup olive oil

  • 1 tbsp maple syrup

  • 1 cup wheat bran

  • 1 cup whole wheat flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • Pinch of salt

  • Optional: pinch of cinnamon

  • Optional: chocolate chips

  • Optional: walnuts

INSTRUCTIONS:

  • Preheat oven to 350°F

  • Grease the bottom of a muffin pan with butter or olive oil

  • Mix all the wet ingredients in a mixing bowl

  • Combine the dry ingredients in a different bowl, then stir in the wet ingredients until combined. Don’t over mix.

  • Fold in the chocolate chips and walnuts (if using)

  • Transfer the batter to the muffin pan and bake for ~20 minutes

  • Let the muffins cool down before removing them from the pan

  • Optional: store them in the freezer to defrost for weekday breakfasts
